The "oz" on a cup is fluid ounces, filled to the brim. In practice you serve a little below the rim, so leave room for milk, foam and a lid.

Which lids fit which coffee cups?
Lids are sized by the width of the cup rim in millimetres, not by ounces. This is where most ordering mistakes happen.
- 8oz cups take an 80mm lid.
- 12oz and 16oz cups share a 90mm lid. That is handy, because one box of lids covers both sizes.
- 4oz cups are usually served without a lid, since espresso is drunk at the counter.
One important catch: a lid only fits properly if it is made for that cup's rim. Rims differ slightly between manufacturers, so a lid from one brand can sit loose on another brand's cup. The safest move is to buy cups and lids from the same range. If a lid ever pops off in a customer's hand, that is almost always the reason.

Which cup sizes should a café stock?
It depends what you sell, but most Irish coffee counters land somewhere like this:
- Small café or deli counter: 8oz and 12oz. That covers flat whites, teas, lattes and americanos. Add 16oz later if customers keep asking for a large.
- Busy coffee shop or drive-through: 8oz, 12oz and 16oz, with 12oz as your biggest order by far.
- Specialty or espresso bar: add 4oz for espresso and macchiato.
- Office, event or catering: 8oz on its own is often enough for tea and coffee service.
A tip from experience: order lids at the same time as cups, in matching quantities. Running out of lids on a Monday morning is just as bad as running out of cups.
Should I use single wall or double wall cups?
Single wall cups are one layer of paperboard. They are the cheapest option but get hot to hold, so staff often add a sleeve or double-cup, which wipes out the saving. Double wall cups have an insulating outer layer, so they are comfortable to hold with no sleeve and feel more premium in the hand.
As a rough rule, single wall suits tea, office service and anything drunk quickly. Double wall suits takeaway coffee, where the customer is carrying it down the street.
